Ingredients
  

For the Crust

  • 1 1/2 cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar

For the Filling

  • 2 cups cream cheese, softened (about 16 oz) Use room temperature cream cheese for easier mixing.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy whipping cream, whipped to soft peaks
  • 1 can (21 oz) peach pie filling Or use fresh peaches cooked with sugar and cornstarch for a homemade filling.
  • 2-3 fresh peaches, sliced, for garnish

For the Crumb Topping

  • 1/2 cup graham cracker crumbs
  • 2 tablespoons brown sugar
  • 2 tablespoons unsalted butter, melted

Instructions
 

Preparation

  • In a bowl, mix the graham cracker crumbs, melted butter, and sugar until combined. Press the mixture into the bottom of a 9-inch springform pan or pie dish. Chill in the refrigerator for 15 minutes.
  • In a large mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • Gently fold in the whipped cream until fully incorporated.
  • Spread half of the cheesecake mixture over the chilled crust and smooth it out with a spatula.
  • Spoon the peach pie filling evenly over the first layer of cheesecake.
  • Top with the remaining cheesecake mixture, spreading it evenly.
  • In a small bowl, mix the graham cracker crumbs, brown sugar, and melted butter until crumbly. Sprinkle the crumb mixture over the top of the cheesecake.
  • Arrange fresh peach slices on top for a decorative finish.
  • Chill the cheesecake in the refrigerator for at least 4 hours, or overnight, to set.

Serving

  • Slice and serve this creamy, fruity delight. It pairs well with extra peach slices or a drizzle of peach syrup.

Notes

To store, cover with plastic wrap or aluminum foil and keep in the refrigerator for up to one week. For longer storage, freeze individual slices and thaw in the refrigerator before serving.
