Ingredients
  

For the Peach Filling

  • 2 cups fresh or frozen peaches, diced
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract

For the Crumble Topping

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a baking dish.
  • In a bowl, combine the diced peaches with granulated sugar and vanilla extract. Set aside.
  • In another bowl, mix together the flour, oats, brown sugar, cinnamon, and salt. Stir in the melted butter until crumbly.

Assembly

  • Press half of the crumble mixture into the bottom of the prepared baking dish to form a base.
  • Spread the peach mixture evenly over the base.
  • Sprinkle the remaining crumble mixture on top of the peaches.

Baking

  • Bake for 30-35 minutes, or until golden brown.
  • Allow to cool before slicing into bars and serve.

Notes

For best results, let the bars cool completely before slicing to help them hold their shape. These bars can be served warm or at room temperature, and can be enhanced with vanilla ice cream or whipped cream.
