Filling

  • 6 large fresh peaches, peeled and sliced About 6 cups
  • 1/4 cup granulated sugar Adjust to taste
  • 1 tablespoon all-purpose flour For thickening
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Topping

  • 1/2 cup old-fashioned oats
  • 1/2 cup all-purpose flour Or gluten-free flour for a gluten-free version
  • 1/3 cup brown sugar Lightly packed
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted

Preparation

  • Preheat the oven to 350°F (175°C) and grease a baking dish.
  • In a bowl, mix the sliced peaches, granulated sugar, 1 tablespoon flour, 1/2 teaspoon cinnamon, and vanilla extract. Set aside.
  • In another bowl, combine oats, 1/2 cup flour, brown sugar, salt, and 1/2 teaspoon cinnamon. Stir in the melted butter until crumbly.

Cooking

  • Place the peach mixture in the prepared dish and spread the crisp topping evenly over the peaches.
  • Bake for about 30-35 minutes, or until the topping is golden brown and the peaches are bubbly. Let it cool for a few minutes before serving.

Notes

Serve warm, topped with vanilla ice cream or whipped cream. Store leftovers in an airtight container in the fridge for about 3-4 days. Reheat individual servings in the microwave.
