Ingredients
  

For the Peach Filling

  • 6 medium fresh peaches, sliced (peeling optional) About 2–2.5 lbs
  • 1 tbsp lemon juice
  • 1/4 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla extract

For the Topping

  • 3/4 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup cold unsalted butter, cubed Should be cold for best texture
  • 1/2 cup old-fashioned oats
  • 1/2 cup chopped pecans (optional)

For Serving

  • to taste vanilla ice cream (optional) Pairs well with the warm crisp

Instructions
 

Preparation

  • Preheat the oven to 350°F (177°C). Lightly grease a 9-inch baking dish.
  • In a large bowl, toss the peach slices with lemon juice, sugar, flour, and vanilla. Pour the mixture into the prepared dish.

Topping

  • In a separate bowl, whisk together the flour, brown sugar, cinnamon, and salt.
  • Cut in the cold butter using a fork or pastry cutter until the mixture is crumbly.
  • Stir in the oats and pecans (if using). Sprinkle the topping over the peaches.

Baking

  • Bake for 40-45 minutes until the topping is golden and the juices are bubbling.
  • Serve warm with vanilla ice cream if desired.

Notes

Store leftovers covered in the refrigerator for 3-5 days, or freeze for longer storage. Reheat in the oven before serving.
