Ingredients
  

For the Peach Filling

  • 4 pounds peaches About 12 medium peaches, blanched and sliced.
  • ½ cup sugar To sweeten the peaches.
  • ½ teaspoon cinnamon For flavor.
  • ¼ cup cornstarch To thicken the filling.
  • 2 tablespoons fresh lemon juice Adds a tangy flavor.

For the Crumble Topping

  • 1 cup all-purpose flour Base for the crumble.
  • 1 cup old-fashioned oats For texture.
  • ½ cup brown sugar Adds sweetness.
  • ½ cup sugar For extra sweetness.
  • 1 teaspoon cinnamon For flavor.
  • ¼ teaspoon ground nutmeg For flavor.
  • ¼ teaspoon salt Balances flavors.
  • ½ cup cold unsalted butter Cut into small pieces for the topping.
  • 1 large egg yolk Helps bind the topping.

Instructions
 

Preparation

  • Preheat the oven to 350°F and lightly grease a 3-quart ceramic baking dish.
  • Blanch the peaches, then peel and slice them.
  • In a bowl, mix the sliced peaches, ½ cup sugar, ½ teaspoon cinnamon, ¼ cup cornstarch, and 2 tablespoons fresh lemon juice. Pour this mixture into the greased baking dish.
  • In another bowl, combine 1 cup all-purpose flour, 1 cup old-fashioned oats, ½ cup brown sugar, ½ cup sugar, 1 teaspoon cinnamon, ¼ teaspoon ground nutmeg, and ¼ teaspoon salt.
  • Add the cold, cut-up butter and 1 large egg yolk to the dry ingredients. Mix until crumbly.
  • Sprinkle the crumble topping over the peach mixture in the baking dish.

Baking

  • Bake in the preheated oven for about 40-45 minutes, or until the topping is golden brown and the peaches are bubbly.
  • Allow to cool slightly before serving.

Notes

Serve warm with vanilla ice cream or whipped cream for an extra treat. To store, let cool completely, then cover and refrigerate for 3-5 days or freeze for up to 3 months.
