Ingredients
  

Fruit Filling

  • 4 cups fresh or frozen peaches, sliced Use ripe peaches for the best flavor.
  • 1/4 cup maple syrup or sweetener of choice Adjust sweetness based on your taste preferences.

Crisp Topping

  • 1 cup rolled oats
  • 1/2 cup almond flour Makes the recipe gluten-free.
  • 1/4 cup maple syrup Remaining from the fruit mixture.
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, mix the sliced peaches with half the maple syrup and toss to combine. Spread the mixture evenly in a baking dish.
  • In another bowl, combine the oats, almond flour, remaining maple syrup, cinnamon, salt, melted coconut oil, and vanilla extract. Mix until the ingredients are well combined and crumbly.

Baking

  • Sprinkle the oat mixture over the peaches in the baking dish.
  • Bake for 30-35 minutes or until the top is golden and the peaches are bubbly.
  • Let cool slightly before serving.

Notes

Serve warm with dairy-free ice cream or whipped coconut cream. Store leftovers in an airtight container in the refrigerator for up to three days.
