  • 4 cups freestone peaches, diced Make sure to use freestone peaches for easier dicing.

Topping Ingredients

  • 1 cup rolled oats
  • 1/2 cup brown sugar Adjust according to the sweetness of peaches.
  • 1/2 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon cinnamon Add a splash of lemon juice for more flavor.
  • 1/4 teaspoon salt

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the diced peaches with a tablespoon of brown sugar; mix well and spread in a greased baking dish.

Topping

  • In a separate bowl, mix the oats, flour, brown sugar, cinnamon, and salt.
  • Stir in the melted butter until crumbly.
  • Sprinkle the oat mixture evenly over the peaches.

Baking

  • Bake in the preheated oven for 30-35 minutes until the topping is golden brown and the peaches are bubbly.

Serving

  • Serve warm, optionally with a scoop of vanilla ice cream.

Notes

Store any leftovers in the refrigerator for up to 3 days. Reheat at 350°F (175°C) for 10-15 minutes. Peeling peaches is optional for a rustic texture.
