  • 1 teaspoon vanilla extract
  • 1/2 cup milk

  • 2 cans peaches in juice Ensure well-drained to avoid excess moisture.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine flour, salt, and baking powder.
  • In another bowl, beat together the eggs, melted butter, sugar, vanilla extract, and milk.
  • Gradually mix the wet ingredients into the dry ingredients until just combined.
  • Fold in the peaches with their juice.
  • Fill a greased muffin tin with the batter.

Baking

  • Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
  • Let cool before serving.

Notes
