Ingredients

  • 4-5 medium medium peaches, peeled and diced Use ripe, sweet peaches for best flavor.
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp cornstarch Mix with water before adding.
  • 1 tsp lemon juice Fresh lemon juice enhances flavor.

For the Crumble Topping

  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/4 cup butter, softened Cut in until crumbly.
  • 1/4 tsp cinnamon

For the Glaze

  • 1/4 cup powdered sugar
  • 1 tbsp milk Adjust for desired consistency.
  • 1/2 tsp vanilla extract

For Assembly

  • 6 pieces waffle cones Store-bought or homemade.

Instructions
 

Prepare the Peach Filling

  • Cook the peaches in a medium saucepan with granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice for 5-7 minutes until softened.
  • Mix cornstarch with 1 tablespoon of water, stir into the peach mixture, and cook for another 1-2 minutes until thickened.
  • Set aside to cool.

Make the Crumble Topping

  • Combine flour, oats, granulated sugar, brown sugar, and cinnamon in a bowl.
  • Cut in the softened butter until crumbly.
  • Preheat the oven to 350°F (175°C), spread the mixture on a baking sheet, and bake for 10-12 minutes until golden brown.
  • Set aside to cool.

Assemble the Dessert Cones

  • Spoon the cooled peach filling into each waffle cone and top with crumble.

Prepare the Glaze

  • Mix powdered sugar, milk, and vanilla extract in a small bowl until smooth.
  • Drizzle over the cones.
