Ingredients
  

For the Graham Cracker Crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cups granulated sugar
  • 0.5 cups unsalted butter, melted

For the Cheesecake Layer

  • 8 oz cream cheese, softened
  • 0.5 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream

For the Peach Cobbler Topping

  • 3 cups fresh or canned peaches, diced Make sure to drain canned peaches.
  • 0.25 cups brown sugar
  • 1 tsp cinnamon
  • 1 tbsp unsalted butter
  • 1 tsp cornstarch Mixed with 2 tsp water.

For the Crumb Topping

  • 0.5 cups all-purpose flour
  • 0.25 cups brown sugar
  • 0.25 cups unsalted butter, cold and cubed
  • 0.5 tsp cinnamon

Preparation

  • In a bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture firmly into the bottom of small dessert cups or jars. Chill in the refrigerator while preparing the other layers.
  • Beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Fold in the whipped cream gently until fully incorporated. Set aside in the refrigerator.
  • In a saucepan over medium heat, combine peaches, brown sugar, cinnamon, and butter. Cook until the peaches release their juices and become tender, about 5 minutes. Add the cornstarch mixture to thicken the sauce and cook for another 1–2 minutes until the mixture thickens. Let it cool completely.
  • Preheat your oven to 350°F (175°C). In a bowl, combine flour, brown sugar, and cinnamon. Cut in the cold butter using a fork or pastry cutter until the mixture resembles coarse crumbs. Spread the crumbs on a baking sheet and bake for 8–10 minutes until golden brown. Let it cool.

Assembly

  • Spoon or pipe a layer of the cheesecake mixture over the chilled graham cracker crust. Add a layer of the peach cobbler topping. Sprinkle the crumb topping generously over the peaches. Repeat the layers if your cup size allows, ending with more peaches and crumb topping.
  • Refrigerate the assembled cups for at least 2 hours to set. Serve chilled and enjoy!

Notes

For a gluten-free option, use gluten-free graham cracker crumbs. Blueberries or strawberries can also be used instead of peaches. Store any leftovers in an airtight container for up to 3-4 days.
