Ingredients
  

For the Graham Cracker Crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cups melted butter
  • 0.25 cups brown sugar

For the Cheesecake Layer

  • 2 packages (8 oz) cream cheese, softened Use room temperature for better mixing.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, whipped to stiff peaks Be careful not to overwhip.

For the Caramelized Peaches

  • 2 cups fresh or canned peaches, sliced If using canned, drain well.
  • 0.25 cups brown sugar
  • 0.5 teaspoon ground cinnamon
  • 1 tablespoon butter

For Garnish

  • to taste crumbled graham crackers or extra brown sugar For added texture.

Preparation of Graham Cracker Crust

  • In a small bowl, combine graham cracker crumbs, melted butter, and brown sugar. Stir until evenly coated.
  • Divide this mixture between your serving cups and press it down to form a firm base.

Making the Cheesecake Layer

  • In a large bowl, beat the softened cream cheese and powdered sugar until smooth. Add the vanilla extract.
  • In another bowl, whip the heavy cream until firm peaks form, then gently fold it into the cream cheese mixture.

Caramelizing the Peaches

  • In a skillet over medium heat, melt the butter and add the peach slices. Cook for 2-3 minutes until they begin to soften.
  • Stir in brown sugar and cinnamon, cooking for an additional 5 minutes until tender.

Assembling the Cheesecake Cups

  • Spoon a layer of cheesecake mixture into each cup followed by a layer of caramelized peaches.
  • If there is space, repeat the layers, finishing with more peaches on top.

Garnishing and Serving

  • Top with crumbled graham crackers or extra brown sugar for texture.
  • Chill the cups in the refrigerator for at least 2 hours before serving.
  • For extra taste, drizzle with caramel syrup or top with whipped cream.

Notes

Store leftover cups in an airtight container for up to three days. Add garnish right before serving to keep the crust crunchy.
