Ingredients
  

For the crust

  • 1.5 cups graham cracker crumbs You can substitute with digestive biscuits or crushed vanilla wafers.
  • 0.5 cup unsalted butter, melted
  • 0.25 cup granulated sugar

For the cheesecake filling

  • 2 packages cream cheese, softened Ensure it's at room temperature for easier mixing.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs Best if at room temperature.
  • 1 cup fresh or canned peaches, chopped Frozen peaches can be used if fresh ones are out of season.
  • 1 teaspoon ground cinnamon

For the topping

  • 1 cup fresh or canned peaches, sliced
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • to taste Whipped cream for serving Optional but recommended.

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C).
  • In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar until well blended.
  • Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8–10 minutes or until lightly browned. Remove from the oven and let cool.

Making the Filling

  • In a large mixing bowl, beat softened cream cheese with an electric mixer until creamy.
  • Gradually add powdered sugar and continue to mix until fluffy and smooth.
  • Mix in the vanilla extract and add eggs one at a time, ensuring each is fully incorporated before adding the next.
  • Gently fold in the chopped peaches and ground cinnamon.

Baking

  • Spread the cheesecake mixture evenly over the cooled crust.
  • Carefully place the cheesecake in the preheated oven and bake for 50–60 minutes.
  • The edges should be set while the center slightly jiggles.
  • Turn off the oven and leave the cheesecake inside with the door slightly ajar for about an hour.
  • Let it cool to room temperature and refrigerate for at least 4 hours, preferably overnight.

Preparing the Topping and Serving

  • In a small bowl, mix sliced peaches with brown sugar and cinnamon.
  • Once the cheesecake has chilled, top it with the peach mixture.
  • Slice, serve, and add a dollop of whipped cream if desired.

Notes

Ensure the cheesecake cools properly to avoid cracks. Using room temperature ingredients contributes to a smoother batter.
