Ingredients
  

Fruit Mixture

  • 4 cups sliced fresh peaches Use ripe, fresh peaches for the best flavor.
  • 1 cup sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice

Batter

  • 1 cup all-purpose flour Can substitute with a gluten-free flour blend.
  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, combine the sliced peaches, sugar, cinnamon, and lemon juice. Set aside for the flavors to blend.
  • In another bowl, mix the flour, baking powder, salt, milk, and melted butter until smooth.

Baking

  • Pour the batter into a greased baking dish.
  • Spoon the peach mixture over the batter. Do not stir it in.
  • Bake for 30-40 minutes or until the top is golden brown.

Serving

  • Serve warm, optionally with a scoop of vanilla ice cream on top.

Notes

To store leftover peach cobbler, cover it tightly and place it in the refrigerator, where it will stay fresh for up to 3 days. Reheat in the microwave for about 20-30 seconds until warm. Can add a pinch of nutmeg or vanilla extract for extra flavor.
