For the peach filling

  • 4 cups fresh peaches, peeled and sliced (or 2 cans, drained)
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg (optional)
  • 1 teaspoon lemon juice

For the topping

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted

Optional Garnish

  • 1 scoop vanilla ice cream or whipped cream

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the peaches, granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg (if using), and lemon juice. Mix well to coat the peaches evenly. Pour the mixture into a greased 9×9-inch baking dish or individual ramekins.
  • In a separate bowl, whisk together the flour, granulated sugar, baking powder, and salt. Add the milk and melted butter to the dry ingredients and stir until a smooth batter forms.
  • Spoon or pour the batter evenly over the peach mixture, spreading gently to cover most of the fruit.

Baking

  • Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the filling is bubbling.

Serving

  • Let the cobbler cool for a few minutes before serving. Top with a scoop of vanilla ice cream or whipped cream for extra indulgence.

Notes

Choose ripe peaches for the best flavor. Adjust sweetness to your taste, and don't skip the spices as they add wonderful flavor. You can vary the fruits used, such as blueberries, raspberries, apples, or cherries.
