Peach Mixture

  • 4 cups fresh peaches, peeled and sliced Use ripe peaches for the best flavor.
  • 1/2 cup sugar Adjust according to the sweetness of the peaches.
  • 1 tablespoon lemon juice

Batter

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix sliced peaches, ½ cup of sugar, and lemon juice. Set aside.
  • In another bowl, combine flour, baking powder, ½ cup of sugar, and salt.
  • Add milk, melted butter, and vanilla extract to the flour mixture. Stir until just combined.
  • Pour the batter into a greased baking dish.
  • Spoon the peach mixture over the batter. Do not stir.

Baking

  • Bake for 30-35 minutes or until the top is golden and bubbly.
  • Let it cool slightly before serving.

Notes

Serve warm, ideally with a scoop of vanilla ice cream on top. Store in the fridge for 3-4 days or freeze for up to 2 months. For variations, add berries or use sugar alternatives like stevia.
