Ingredients
  

Peach Filling

  • 6 cups fresh peaches, peeled and sliced
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons cornstarch

Batter

  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup milk
  • cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Preparation

  • In a large bowl, mix the sliced peaches with ½ cup granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch. Stir until well combined and set aside.

Preheat and Prepare the Dish

  • Preheat your oven to 350°F (175°C). Grease a baking dish with butter or non-stick spray.

Make the Batter

  • In another bowl, mix the flour, ½ cup granulated sugar, baking powder, and salt. Add the milk, melted butter, and vanilla extract. Stir until smooth.

Assemble the Cobbler

  • Pour the peach mixture into the prepared baking dish. Gently spoon the batter over the top of the peaches. Don’t worry if it doesn’t cover the peaches completely.

Bake

  • Place the baking dish in the oven and bake for 45-50 minutes or until the top is golden brown and the peaches are bubbly.

Notes

Serve warm with ice cream or whipped cream. Store leftovers in the refrigerator for up to 3 days.
