Ingredients
  

For the Peach Filling

  • 4 cups fresh peaches, peeled and sliced (or canned peaches, drained) Choose ripe, fresh peaches for best flavor.
  • 1/2 cup granulated sugar Adjust based on the sweetness of your peaches.
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon cornstarch (optional) Use if you prefer a thicker filling.
  • 1/2 teaspoon vanilla extract

For the Topping

  • 1 1/2 cups all-purpose flour Can substitute gluten-free flour.
  • 1/2 cup granulated sugar For topping.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon (for topping)
  • 1/2 cup unsalted butter, cold and cubed For a flaky topping.
  • 1/2 cup buttermilk (or regular milk)
  • 1 tablespoon melted butter (for brushing)
  • Extra cinnamon sugar (optional, for sprinkling)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the sliced peaches, granulated sugar, lemon juice, cinnamon, nutmeg, cornstarch (if using), and vanilla extract. Toss to coat the peaches evenly and pour into a greased 9×9-inch baking dish.

Making the Topping

  • In a separate bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  • Cut in the cold butter until it resembles coarse crumbs.
  • Stir in the buttermilk until just combined.
  • Spoon the topping over the peach mixture.

Baking

  • Brush the topping with melted butter and sprinkle with extra cinnamon sugar.
  • Bake for 40-45 minutes until golden brown and bubbly.
  • Allow to cool slightly before serving.

Notes

Peach cobbler is best served warm. You can enjoy it on its own or add a scoop of vanilla ice cream or a dollop of whipped cream.
