Ingredients
  

Peach Mixture

  • 4 cups sliced fresh or canned peaches (drained) Use ripe, fresh peaches for the best flavor.
  • 1/2 cup sugar Part of the sugar for the peach mixture.
  • 1/2 tsp cinnamon Add nutmeg for extra flavor if desired.
  • 1 tsp lemon juice Enhances the flavor of the peaches.

Batter

  • 1 cup all-purpose flour Can substitute with gluten-free flour.
  • 1/2 cup sugar Remaining sugar for the batter.
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk Use whole milk for a richer taste.
  • 1/2 cup unsalted butter, melted Butter should be hot when added.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix the peaches, 1/2 cup of sugar, cinnamon, and lemon juice. Stir gently and set aside.
  • In a separate bowl, combine the flour, the remaining 1/2 cup of sugar, baking powder, and salt. Stir in the milk until the mixture is smooth.
  • Pour the melted butter into a 9×13-inch baking dish.
  • Pour the batter evenly over the butter, but do not stir it.
  • Spoon the peach mixture over the batter without mixing.

Baking

  • Bake for 40–45 minutes, until the cobbler is golden brown and bubbly.

Notes

Serve warm, preferably with vanilla ice cream or whipped cream. Store leftovers in the refrigerator for up to 3 days.
