Ingredients
  

For the Peach Filling

  • 4 cups fresh or frozen peaches, sliced Use ripe peaches for best flavor. Drain excess juice if using frozen or canned peaches.
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice

For the Cobbler Batter

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar Remaining from the total sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk For a richer taste, replace some of the milk with cream.
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • to taste Ground cinnamon Optional, for sprinkling on top.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix the sliced peaches, 1/2 cup of sugar, and lemon juice. Pour this mixture into a greased 9x13 inch baking dish.
  • In another bowl, whisk together the flour, remaining sugar, baking powder, and salt.
  • Pour in the milk, melted butter, and vanilla extract. Stir until just combined.
  • Pour the batter over the peach mixture in the baking dish. Do not stir.
  • If desired, sprinkle some ground cinnamon on top.

Baking

  • Bake for 40-45 minutes or until the topping is golden brown and the peaches are bubbly.
  • Let it cool slightly before serving.

Notes

Serve warm, either plain or with vanilla ice cream or whipped cream. Store leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze for longer storage.
