  • 1 pound Brussels sprouts Trimmed and halved
  • 2 medium peaches Sliced into bite-sized pieces
  • 2 tablespoons olive oil Plus more for drizzling
  • 1 tablespoon honey Adjust based on sweetness preference
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup feta cheese Crumbled
  • 1/2 cup almonds Chopped

Preparation

  • Preheat your oven to 400°F (200°C).
  • Trim and halve the Brussels sprouts. Toss them with olive oil, honey, salt, and pepper in a bowl.
  • Spread the Brussels sprouts evenly on a baking sheet and roast for 20-25 minutes until they are tender and slightly crispy.
  • While the Brussels sprouts roast, slice the peaches into bite-sized pieces.

Combining Ingredients

  • Once the Brussels sprouts are ready, combine them in a large bowl with the sliced peaches, crumbled feta cheese, and chopped almonds.
  • Drizzle with additional olive oil if desired, mix gently, and serve.

Notes

Best served warm or at room temperature. Store leftovers in an airtight container in the fridge for up to 2 days. The salad is best enjoyed fresh as the peaches may soften over time.
