  • 3 medium ripe peaches Fresh or frozen; if using frozen, thaw and blend.
  • 2 cups almond milk Can substitute with coconut or oat milk.
  • 1/4 cup chia seeds Packed with fiber and omega-3 fatty acids.
  • 2 tbsp honey Can substitute with maple syrup.
  • 1 tsp vanilla extract Enhances natural sweetness.

Preparation

  • Wash and slice the ripe peaches, keeping the skin for added color and nutrients.
  • In a blender, combine the sliced peaches, almond milk, honey (or maple syrup), and vanilla extract. Blend until smooth.
  • In a mixing bowl, combine the chia seeds with the peach blend and stir well, ensuring no clumps.
  • Cover the mixture and let it sit in the fridge for at least 3-4 hours or overnight for a thicker pudding.
  • Once chilled, stir well before serving. Top with peach slices, granola, or a drizzle of honey, if desired.

Notes

Letting the pudding sit for longer allows for a thicker texture. Enjoy different toppings like nuts, coconut flakes, or yogurt for variations.
