  • 1/2 cup olives (e.g., black or green), sliced
  • 1 cup feta cheese, crumbled

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning

Instructions
 

Preparation

  • Cook the pasta according to package instructions; drain and rinse under cold water.
  • In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, bell peppers, olives, and feta cheese.

Mixing Dressing

  • In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
  • Pour the dressing over the pasta salad and toss to combine.

Chilling

  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

You can serve pasta salad as a side dish or a light main dish. Store in an airtight container in the refrigerator for about 3 to 5 days. Add a splash of olive oil or vinegar if it absorbs too much dressing.
