  • 500 grams Pizza Dough
  • 200 grams Mozzarella Cheese, shredded
  • 1 large pepper Roasted Red Peppers, sliced
  • 1 medium Zucchini, sliced and grilled
  • 2 tablespoons Olive Oil For brushing and flavor
  • A handful Fresh Basil Leaves
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper

Method
 

Preparation
  1. Preheat the oven to 475°F (245°C) with a pizza stone or tray inside.
  2. Prepare the roasted vegetables, shred the cheese, and wash the basil.
  3. Roll out the pizza dough into an oval shape and place it on parchment dusted with semolina.
Baking
  1. Bake the rolled dough for 8 minutes.
  2. Slice the dough open and fill it with cheese, roasted veggies, and fresh basil.
  3. Return it to the oven and bake for another 6–8 minutes until golden and melted.
  4. Allow to rest for 5 minutes, then brush with olive oil and sprinkle sea salt.
  5. Slice and serve hot with optional tomato sauce on the side.

Notes

Serve with a fresh garden salad, crispy roasted potatoes, or classic Italian tomato sauce for dipping. Store leftovers in an airtight container in the refrigerator or freeze for up to a month.
