Main Ingredients
  • 500 grams Pizza Dough
  • 200 grams Mozzarella Cheese, shredded Fresh mozzarella is ideal for its meltiness.
  • 1 large pepper Roasted Red Peppers, sliced
  • 1 medium Zucchini, sliced and grilled
  • 2 tablespoons Olive Oil Brush on the sandwich for flavor.
  • A handful Fresh Basil Leaves Wash before use.
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper

Method
 

Preparation
  1. Preheat the oven to 475°F with a pizza stone or tray inside.
  2. Prepare the roasted vegetables, shred the cheese, and wash the basil.
  3. Roll out the pizza dough into an oval and place it on parchment dusted with semolina.
Baking
  1. Bake the dough for 8 minutes.
  2. Slice the dough open and fill it with cheese, roasted veggies, and fresh basil.
  3. Return it to the oven and bake for another 6–8 minutes until golden and melted.
  4. Allow to rest for 5 minutes, brush with olive oil, and sprinkle sea salt.
  5. Slice and serve hot, optionally with tomato sauce on the side.

Notes

To store any leftovers, place in an airtight container in the refrigerator. Best enjoyed fresh but can be reheated in the oven. Freezing individual sandwiches for up to a month is also recommended.
