Preparation

  • Preheat the oven to 425°F (220°C).
  • Rinse the Brussels sprouts, trim the ends, and cut them in half lengthwise.
  • In a large skillet over medium heat, cook the bacon until crispy. Remove from pan and drain on a paper towel, retaining a tablespoon of fat in the pan.

Combining and Roasting

  • In a large bowl, toss the halved Brussels sprouts with the reserved bacon fat, olive oil, brown sugar, salt, and pepper.
  • Spread the sprouts cut-side down on a baking sheet lined with parchment paper and crumble crispy bacon over the top.
  • Roast for 20-25 minutes, shaking the pan halfway through for even cooking.
  • If using fresh herbs, add them a few minutes before removing from the oven.
  • Serve hot in a dish.

Notes

For best results, avoid overcrowding the baking sheet to ensure proper caramelization. You can prepare the Brussels sprouts a day in advance and roast them just before serving.
