Ingredients
  

Bok Choy and Glaze

  • 4 heads baby bok choy (about 12 oz / 340 g), halved lengthwise
  • 2 tbsp olive oil (30 ml)
  • 3 cloves garlic, finely minced
  • 1 tbsp soy sauce (15 ml) – use low sodium if preferred
  • 1 tsp sesame oil (5 ml)
  • 1 tsp honey or maple syrup (optional, 5 ml)
  • to taste Salt and freshly ground black pepper
  • to taste Toasted sesame seeds, for garnish (optional)
  • to taste Red pepper flakes, for a hint of heat (optional)

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
  • Rinse and dry the bok choy heads, then slice each head lengthwise.
  • In a small bowl, mix the olive oil, garlic, soy sauce, sesame oil, and honey/maple syrup (if using) to create the glaze.
  • Toss the bok choy halves with the glaze in a mixing bowl to coat evenly.
  • Arrange the bok choy cut-side down on the prepared baking sheet.

Cooking

  • Roast in the preheated oven for 12-15 minutes, until the stems are tender and edges are caramelized.
  • Remove from the oven, season with salt and pepper, and garnish with toasted sesame seeds and red pepper flakes if desired.
  • Serve immediately while warm.

Notes

Make sure to cut the bok choy evenly for consistent cooking. Adjust the amount of garlic or soy sauce to match your taste preference. For an extra kick, add more red pepper flakes or a splash of sriracha sauce. Leftovers can be stored in an airtight container for up to 3 days. Reheat gently before serving.
