Ingredients
  

Pancake Batter

  • 1.5 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 large egg
  • 1 cup milk (or buttermilk for extra fluffiness)
  • 0.5 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • 1 cup crushed Oreo cookies (reserve extra for topping)

Cream Cheese Drizzle

  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2-3 tablespoons milk (adjust for desired consistency)
  • 0.5 teaspoon vanilla extract

Instructions
 

Preparation

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the egg, milk, vanilla extract, and melted butter.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
  • Fold in the crushed Oreo cookies gently.

Cooking

  • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
  • Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter.

Cream Cheese Drizzle

  • In a bowl, beat the cream cheese until smooth.
  • Add powdered sugar, milk, and vanilla extract, and whisk until the mixture is smooth and pourable. Adjust the consistency with more milk if needed.

Serving

  • Stack the pancakes on a plate and generously drizzle with the cream cheese topping.
  • Sprinkle extra crushed Oreos on top for garnish. Serve warm and enjoy!

Notes

For extra fluffy pancakes, use buttermilk instead of regular milk. Make sure not to overmix the batter; a few lumps are okay for fluffiness. You can add chocolate chips for even more chocolate flavor! For a fun twist, try adding some mini marshmallows or nuts to the batter. Store leftovers in an airtight container in the refrigerator for up to 2 days.
