Ingredients
  

Dry Ingredients

  • 2.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt

Wet Ingredients

  • 1 cup ricotta cheese
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter, softened Ensure butter is softened before use
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp orange zest Freshly grated zest preferred
  • 0.25 cup fresh orange juice
  • Powdered sugar for glaze Use as needed for glaze consistency

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In another bowl, cream together the ricotta cheese, granulated sugar, and softened butter until the mixture is smooth.
  • Beat in the eggs one at a time. Then stir in the vanilla extract, orange zest, and fresh orange juice.
  • Gradually add the dry ingredients to the wet mixture and mix until combined.
  • Drop spoonfuls of dough onto a baking sheet lined with parchment paper.

Baking

  • Bake for 15-20 minutes or until the edges are lightly golden.
  • Let the cookies cool.

Glazing

  • For the glaze, mix powdered sugar with a little orange juice until you reach the desired consistency, then drizzle over the cookies.

Notes

Cookies can be served warm or at room temperature. Store leftovers in an airtight container at room temperature for 3-4 days or freeze for up to 3 months.
