  • 3 large large oranges, peeled and segmented Ensure the oranges are ripe for best flavor.
  • 1 cup vanilla yogurt Can use Greek yogurt for a lower-calorie version.
  • 1/2 cup mini marshmallows
  • 1/4 cup shredded coconut
  • 1/4 cup chopped pecans Can substitute with walnuts.
  • 1 tablespoon honey Adjust sweetness to your preference.
  • 1 teaspoon vanilla extract
Topping
  • 1/2 cup crushed graham crackers Add just before serving to maintain crunch.

Preparation
  1. Mix the vanilla yogurt, honey, and vanilla extract in a large bowl until smooth.
  2. Carefully fold in the orange segments, mini marshmallows, shredded coconut, and chopped pecans.
  3. Spoon the mixture into a serving dish and evenly distribute the crushed graham crackers on top.
  4. Place the dish in the refrigerator for at least 1 hour, allowing the flavors to meld.
  5. Serve chilled.

Notes

Serve in individual cups or bowls for a stunning presentation. Add a sprig of mint on top for a pop of color. Store leftovers in an airtight container in the refrigerator, best consumed within 2-3 days.
