Cake and Gelatin

  • 3 ounces orange gelatin mix
  • 2/3 cup boiling water
  • 2/3 cup cold water For a richer flavor, use fresh orange juice instead.

Pudding Mixture

  • 3.4 ounces instant vanilla pudding mix
  • 1 1/4 cups whole milk

Toppings

  • 8 ounces whipped topping For layering.
  • 1 1/2 cups whipped topping For the top layer.
  • 15 ounces mandarin oranges
  • 11 ounces mandarin oranges For decoration.

Preparation

  • Preheat the oven according to the cake mix package instructions.
  • Prepare the white cake mix and bake in a greased pan. Allow it to cool completely.

Gelatin Mixture

  • In a bowl, dissolve the orange gelatin mix in boiling water.
  • Stir in cold water and let it cool slightly.

Poking and Soaking

  • Once the cake is cooled, poke holes all over the top using a fork.
  • Pour the gelatin mixture over the cake, ensuring it seeps into the holes.
  • Refrigerate for at least 2 hours.

Pudding Layer

  • In another bowl, whisk the instant vanilla pudding mix with whole milk until thickened.
  • Spread the pudding over the cooled cake.
  • Top with whipped topping and mandarin oranges.
  • Refrigerate again for an hour before serving.

Notes

Ensure the cake is completely cool before adding the gelatin mixture to avoid it melting. Feel free to add extra fruit toppings like strawberries or blueberries for added color and flavor. This dessert can be stored in the refrigerator for up to 3 days.
