Preparation
- In a bowl, combine chipotle peppers, orange juice, garlic, honey, olive oil, cumin, paprika, salt, and pepper. Whisk until smooth.
- Place chicken breasts (or thighs) in a shallow dish or ziplock bag. Pour the marinade over the chicken, ensuring it’s fully coated. Refrigerate for at least 30 minutes, or overnight for best results.
Cooking
- Heat a large skillet over medium-high heat. Add a little oil and sear the chicken for 4-5 minutes per side or until cooked through and golden brown. Check internal temperature — it should reach 165°F (75°C).
- Remove the chicken from the skillet and let it rest for 5 minutes before slicing.
Serving
- Serve the chicken with your favorite sides or on top of rice, in wraps, or over a salad. Garnish with fresh cilantro and a drizzle of the remaining marinade if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in a skillet or microwave. For longer storage, freeze in a freezer-safe bag for up to three months.
