  • 8 oz Pasta (spiral, penne, or whole wheat)
  • 1 lb Ground beef (or turkey, or beans for vegetarian) Substitute with beans or lentils for vegetarian option.
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 1 tsp Paprika
  • 14.5 oz Diced tomatoes (fire-roasted or regular) Includes juices.
  • 4 cups Broth (beef or vegetable)
  • 1 cup Cheddar or pepper jack cheese, shredded Add for creaminess.

Instructions
 

Preparation

  • Heat a splash of olive oil in a large pot over medium heat.
  • Add diced onions, sautéing until they turn translucent.
  • Add minced garlic and sauté briefly.

Cooking

  • Stir in ground meat and cook until browned, breaking it up with a wooden spoon.
  • Sprinkle in cumin, chili powder, and paprika; stir to enhance flavors.
  • Pour in diced tomatoes and broth, bringing the mixture to a gentle simmer.
  • Add pasta and stir until it's submerged in the liquid.
  • Cover and cook according to the pasta package instructions (about 10-12 minutes). Stir occasionally.
  • Once the pasta is al dente and liquid mostly absorbed, remove from heat.
  • Stir in cheese until melted and creamy.

Serving

  • Serve hot, garnished with toppings like cilantro, avocado, or extra cheese.

Notes

Tip: Taste as you go to adjust seasoning. Add splash of broth if mixture is too dry.
