Ingredients
  

For the Chicken

  • 2 pieces Chicken breasts Can substitute with chicken thighs or tofu.
  • 1 tablespoon Butter Use more if desired.
  • Salt Salt To taste.
  • Pepper Pepper To taste.

For the Orzo

  • 1 cup Orzo Can substitute with rice or quinoa.
  • 3 cups Chicken broth Can substitute with vegetable broth.
  • 3 cloves Garlic Minced, can substitute with garlic powder (use sparingly).
  • 1 tablespoon Butter For richness.
  • 1 lemon Lemon (juiced and zested) Provides brightness and acidity. Can substitute with white wine or apple cider vinegar.
  • 1/4 cup Fresh herbs (parsley or thyme) Use dried herbs if necessary, half the quantity.

Seasoning

  • Salt Salt To adjust seasoning.
  • Pepper Pepper To adjust seasoning.

Preparation

  • Heat a large skillet over medium heat and add 2 tablespoons of butter. Once melted, season chicken breasts with salt and pepper, then add them to the skillet.
  • Sear the chicken for about 5 minutes on each side until golden brown and fully cooked. Remove chicken from the skillet and let it rest.

Cooking the Orzo

  • In the same skillet, add another tablespoon of butter. Toss in minced garlic and cook for about 1 minute, stirring frequently to prevent burning.
  • Stir in the orzo, allowing it to absorb the remaining flavors. Pour in chicken broth and bring it to a gentle simmer.
  • Zest and juice a lemon, then add both to the orzo along with fresh herbs. Stir it all together.
  • Cover the skillet and let the orzo cook for about 10-12 minutes, stirring occasionally, until the orzo is tender and has absorbed the broth.
  • While the orzo cooks, slice the rested chicken. Once the orzo is ready, return the chicken to the skillet and toss everything together.
  • Add a final tablespoon of butter for richness, adjusting seasoning as necessary. Serve immediately, garnished with extra herbs and a lemon wedge.

Notes

For added depth of flavor, consider adding sautéed mushrooms or fresh spinach to the skillet. A sprinkle of grated Parmesan cheese just before serving can elevate the dish further.
