- In a large pot, heat olive oil over medium heat.
- Add the diced onion and sauté until translucent.
- Add the chicken pieces and cook until browned.
- Stir in garlic powder, onion powder, and chili powder.
- Add the uncooked rice, diced tomatoes, and black beans.
- Pour in enough water or chicken broth to cover the ingredients.
- Bring to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes or until the rice is cooked.
- Fluff the mixture with a fork and serve hot.
Notes
For added flavor, top with fresh cilantro and sliced avocados. Serve with a dollop of sour cream and a side of salad or tortilla chips.
