Main Ingredients
  • 1 pound chicken breast cut into bite-sized pieces Ensure chicken is cut into uniform sizes for even cooking.
  • 3 tablespoons olive oil
  • 1/4 cup yellow onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons chili powder Add more for a spicier kick.
  • 1 cup extra-long grain rice, uncooked Brown rice can be used but may require adjustment in cooking time.
  • 1 14.5 oz can diced tomatoes, drained
  • 1 15 oz can black beans, drained and rinsed Can substitute with pinto or kidney beans.

Method
 

Cooking Instructions
  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced onion and sauté until translucent.
  3. Add the chicken pieces and cook until browned.
  4. Stir in garlic powder, onion powder, and chili powder.
  5. Add the uncooked rice, diced tomatoes, and black beans.
  6. Pour in enough water or chicken broth to cover the ingredients.
  7. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes or until the rice is cooked.
  8. Fluff the mixture with a fork and serve hot.

Notes

For added flavor, top with fresh cilantro and sliced avocados. Serve with a dollop of sour cream and a side of salad or tortilla chips.
