  • 1 lb baby potatoes, sliced in half or quarters
  • 8 oz green beans, washed and trimmed
  • 1 small yellow onion, cut into wedges or sliced (1 cup total)
  • 1 lb pre-cooked andouille sausage or kielbasa, cut into 1-inch slices on the bias
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine the potatoes, green beans, onion, sausage, olive oil, and garlic powder. Toss until everything is evenly coated.
  • Spread the mixture in a single layer on a large baking sheet.

Cooking

  • Bake for 25-30 minutes, or until the vegetables are tender and slightly crispy, stirring halfway through.
  • Serve hot.

Notes

This dish is delicious on its own, but can be served with a fresh side salad or crusty bread. A light vinaigrette, sour cream, or Parmesan cheese can enhance the meal.
