  • 3 medium zucchini, sliced Feel free to swap for summer squash.
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt to taste Salt, to taste
  • Black pepper to taste Black pepper, to taste
  • 1 cup cheese of choice Parmesan, mozzarella, or goat cheese can be used.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, toss together the sliced zucchini and minced garlic with olive oil, salt, and black pepper until well coated.
  3. Spread the zucchini mixture in a single layer on a baking sheet.
Baking
  1. Roast in the preheated oven for about 20-25 minutes, or until the zucchini is tender and gently golden.
  2. Once baked, sprinkle your choice of cheese atop the zucchini.
  3. Return it to the oven for another 5-10 minutes until the cheese is melted and bubbling.

Notes

This dish can be enhanced with red pepper flakes for heat or different cheese blends. If you have leftovers, store in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C).
