Peach Filling

  • 8 cups fresh peaches, peeled and sliced (about 6-7 medium peaches) Choose ripe peaches for the best flavor.
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 teaspoons cornstarch (optional, for thickening) Increase slightly for a thicker cobbler.

Cobbler Batter

  • 1 cup all-purpose flour Use a gluten-free flour blend for gluten-free diets.
  • 1 cup granulated sugar (for topping batter)
  • 1 teaspoon baking powder
  • ½ teaspoon salt A pinch of sea salt can enhance sweetness.
  • 1 cup milk
  • ½ cup unsalted butter, melted

Preparation

  • Preheat your oven to 375°F (190°C). Butter a 9×13 inch baking dish or similar oven-safe dish.
  • In a large bowl, toss sliced peaches with granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch if using. Let sit for 10-15 minutes to release juices.

Batter Preparation

  • In a separate bowl, whisk together flour, baking powder, salt, and sugar (for topping). Slowly add milk and melted butter, mixing until smooth and well combined.

Assembling and Baking

  • Pour peach mixture evenly into the prepared baking dish, spreading juices as evenly as possible.
  • Pour the batter over the peaches in dollops or spoonfuls. Don’t worry about covering the peaches completely—batter will spread while baking.
  • Bake for 40-45 minutes until the top is golden brown and a toothpick inserted into the batter comes out clean. The peach juices should be bubbling around the edges.

Serving

  • Let cobbler cool slightly before serving. It’s delicious warm and perfect with vanilla ice cream or whipped cream.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place individual servings in the microwave for about 30 seconds. Can be frozen for up to 3 months if well wrapped to avoid freezer burn.
