Ingredients
  

For the Peach Filling

  • 6-7 pieces fresh peaches, peeled and sliced (or 2 cans sliced peaches, drained) Use fresh or canned peaches based on availability.
  • ½ cup packed brown sugar Taste peaches first and reduce sugar if they're sweet.
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon Adjust spices to your taste.
  • ½ tsp ground nutmeg Can add a dash of ginger for more flavor.
  • 2 tsp cornstarch (optional, for thicker filling)
  • Pinch of salt

For the Cobbler Topping

  • 1 cup all-purpose flour For a gluten-free option, use almond flour.
  • 1 cup granulated sugar
  • tsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • ½ cup unsalted butter, melted 1 stick of butter.

Instructions
 

Preheat the Oven

  • Set your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.

Make the Peach Filling

  • In a large bowl, mix sliced peaches with brown sugar, lemon juice, cinnamon, nutmeg, and a pinch of salt. Stir in cornstarch if using fresh peaches or for a thicker filling.

Prepare the Batter

  • In a separate bowl, whisk together flour, granulated sugar, baking powder, and salt. Stir in milk until smooth, then slowly whisk in melted butter.

Assemble the Cobbler

  • Pour the batter into the prepared baking dish—do not stir. Gently spoon the peach mixture over the batter, spreading it out evenly.

Bake

  • Bake uncovered for 40-45 minutes, or until the top is golden brown and a toothpick comes out clean. Let cool for at least 15 minutes before serving.

Serve

  • Serve warm with vanilla ice cream or whipped cream.

Notes

Store in the fridge for up to three days. Reheat in the oven or microwave. Freezes well in an airtight container for up to three months.
