Ingredients
  

Peach Filling

  • 8 cups peeled and thinly sliced fresh peaches Choose ripe peaches for the best flavor.
  • ½ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt

Oat Topping

  • ½ cup all-purpose flour This is for the topping mixture.
  • ¾ cup packed light brown sugar
  • ½ cup salted butter Room temperature.
  • 1 teaspoon ground cinnamon This is for the topping mixture.
  • 1 ¾ cups old-fashioned oats

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C). Butter a 9x9 baking pan and set aside.
  • In a large bowl, mix the peaches, granulated sugar, 2 tablespoons of flour, cornstarch, 1 teaspoon of cinnamon, and salt until well combined.
  • Pour the peach mixture into the prepared pan and set aside.
  • In the same large bowl, cream together the brown sugar, remaining ½ cup of flour, butter, and remaining teaspoon of cinnamon until it forms a wet, clumpy mixture.
  • Add the oats and stir until you have a coarse mixture.
  • Crumble the oat mixture evenly on top of the peaches.

Baking

  • Bake for 20 to 25 minutes, until the oats start to turn a light golden color around the edges.
  • Remove from the oven and let it rest for 10 minutes to cool and set up.

Serving

  • Serve warm, with vanilla ice cream if desired.

Notes

Allow to cool completely before storing. Cover with plastic wrap or transfer to an airtight container. Can be stored in the refrigerator for up to 3 days. Reheat before serving. For extra flavor, add a splash of vanilla to the peach mixture or mixed nuts into the oat topping.
