Ingredients
  

Dry Ingredients

  • 2 cups Rolled oats
  • 1 cup Flour Use gluten-free flour for a gluten-free option.
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon

Wet Ingredients

  • 1 cup Peanut butter Crunchy peanut butter can be used for a nuttier flavor.
  • 1/2 cup Maple syrup Can be substituted with honey.
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • 1/2 cup Butter Melted

Mix-ins

  • 1 cup Chocolate chips Feel free to use white chocolate or dark chocolate.

Preparation

  • Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking pan.
  • In a large bowl, mix together the oats, flour, baking powder, and cinnamon.
  • In another bowl, whisk together the peanut butter, maple syrup, eggs, and vanilla extract until smooth.
  • Combine the wet and dry ingredients, then fold in the chocolate chips.
  • Pour the batter into the prepared baking pan and spread it evenly.

Baking

  • Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  • Allow to cool before cutting into bars.

Notes

Store in an airtight container for up to 3 days at room temperature or freeze for longer storage. Wrap each bar individually for freezing.
