Ingredients
  

For the Cookie Dough

  • 1 cup unsalted butter, softened Make sure your butter is softened for easy mixing.
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Dry Ingredients

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

  • 3 cups old-fashioned rolled oats Use old-fashioned rolled oats for the best texture.
  • 1.5 cups chocolate chips (semi-sweet or milk chocolate)

Preparation

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone baking mats.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in the rolled oats and chocolate chips until evenly distributed throughout the cookie dough.
  • (Optional) Chill the dough in the refrigerator for 30 minutes to 1 hour for thicker cookies.

Baking

  • Scoop out tablespoon-sized portions of dough and roll them into balls, placing them onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  • Allow the cookies to cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely.

Notes

These cookies are best served warm, straight from the oven. For extra flavor, try adding a pinch of cinnamon or nutmeg to the dry ingredients. For chewier cookies, don't overmix the dough once you add the oats and chocolate chips. Store in an airtight container at room temperature for up to a week.
