Preparation

  • In a bowl, whisk together the eggs and cream cheese until smooth. Then add shredded cheese and mix until fully incorporated.
  • In a small bowl, combine cinnamon, sweetener, and melted butter. Set aside.

Cooking

  • Preheat your waffle maker and lightly grease it with cooking spray or coconut oil.
  • Pour half of the batter into your preheated waffle maker, spreading it evenly.
  • Spoon over half of the cinnamon filling and cover it with the remaining batter.
  • Close the waffle maker and cook for about 4-5 minutes or until golden brown.
  • Once cooked, gently remove your chaffles. Top with cream cheese frosting or sprinkle a bit more cinnamon and sweetener.
  • Serve immediately for the best experience, ideally with coffee or tea.

Notes

For a fluffier texture, let the batter sit for a few minutes before cooking. Avoid overcrowding your waffle maker and ensure it’s fully heated.
