Ingredients
  

For the cookies

  • 2 cups granulated sugar
  • 3/4 cup butter (1 1/2 sticks)
  • 2/3 cup evaporated milk Can be substituted with regular milk
  • 3.4 ounces instant butterscotch pudding mix
  • 3 1/2 cups quick oats Old-fashioned oats can be used for a chewier texture
  • Dash to taste salt Adjust according to preference
  • 1 cup semi-sweet chocolate chips Can be replaced with white chocolate chips
  • 1/2 cup toffee chips

Preparation

  • In a medium saucepan, combine sugar, butter, and evaporated milk. Bring to a rolling boil over medium heat, stirring frequently.
  • Boil for 2 minutes, then remove from heat.
  • Stir in the instant butterscotch pudding mix, quick oats, and salt until well combined.
  • Fold in the semi-sweet chocolate chips and toffee chips.
  • Drop spoonfuls of the mixture onto wax paper or parchment paper.
  • Allow cookies to cool and set at room temperature for about 30 minutes or until firm.

Notes

Store in an airtight container at room temperature for up to a week. Can store in the fridge or freeze for longer freshness.
