Ingredients
  

For the cookies

  • 11 oz soft caramels or caramel baking bits Can use either soft caramels or caramel baking bits.
  • 2 tablespoons butter Unsalted butter preferred.
  • 1/2 teaspoon vanilla extract Adds flavor to the cookies.
  • 2 cups quick-cooking oats Quick-cooking oats create a softer texture.
  • Flaky sea salt For topping the cookies.

Preparation

  • In a medium saucepan over low heat, combine the caramels and butter. Stir constantly until fully melted and smooth (about 5-7 minutes).
  • Remove the pan from heat and stir in the vanilla extract.
  • Add the quick oats and stir until evenly coated with the caramel mixture.
  • Scoop spoonfuls of the mixture onto a parchment-lined baking sheet. Use the back of a spoon to gently press them into cookie shapes.
  • While still warm, sprinkle each with a pinch of flaky sea salt.
  • Let the cookies cool at room temperature for 20-30 minutes, or until firm.

Notes

Store cookies in an airtight container at room temperature for up to one week, or refrigerate for up to two weeks. Stir the caramel mixture constantly to prevent burning. Consider adding nuts or chocolate chips for added flavor.
