  • 2 cups mini pretzels, broken into pieces
  • 1 cup peanut butter (creamy or chunky) Feel free to use whatever type you have on hand.
  • 1 cup honey Can substitute with maple syrup if desired.
  • 1 cup semi-sweet chocolate chips Or use dark chocolate for a richer taste.
  • 1 teaspoon vanilla extract
  • 1 pinch salt A sprinkle of sea salt on top enhances flavor.

Preparation
  1. In a large mixing bowl, combine the peanut butter and honey. Microwave this mixture for 30 seconds, then stir until smooth.
  2. Add the vanilla extract and a pinch of salt, mixing well.
  3. Fold in the broken pretzel pieces, ensuring they are all well coated in the peanut butter mixture.
  4. Line a baking sheet with parchment paper to prevent sticking.
  5. Using a tablespoon, scoop out small clusters of the pretzel mixture and place them onto the prepared baking sheet.
  6. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring after each interval until completely smooth.
  7. Drizzle the melted chocolate over each of the pretzel clusters.
  8. Refrigerate the baking sheet for at least one hour, or until the clusters have set completely.
  9. Once firm, store the clusters in an airtight container in the fridge for future enjoyment.

Notes

These can be served in a decorative bowl for a fun centerpiece or packaged as homemade gifts. They last about a week in the refrigerator or can be frozen for up to three months.
