  • 1 cup peanut butter (smooth or crunchy) Ensure it's well-mixed and smooth before use.
  • 1/4 cup honey or maple syrup For a sweeter taste, add an extra tablespoon if desired.
  • 1 teaspoon vanilla extract
  • 2 cups old-fashioned rolled oats Quick oats can be used, but texture may vary.
  • 1/4 cup mini chocolate chips Optional for added sweetness.

Preparation

  • In a mixing bowl, combine peanut butter, honey or maple syrup, and vanilla extract until smooth.
  • Stir in the rolled oats and mini chocolate chips (if using) until well combined.
  • Press the mixture into a lined baking dish or cup molds evenly.
  • Refrigerate for at least 1 hour to set.
  • Once set, cut into bars or cups and enjoy!

Notes

Store in an airtight container in the refrigerator for up to a week, or freeze for up to three months. Good served cold, great for lunchboxes or post-workout.
