Ingredients
  

For the crust
  • 1.5 cups crushed graham crackers Can substitute with other sweet crackers
  • 0.5 cups unsalted butter, melted Helps to bind the crust
For the filling
  • 8 oz cream cheese, softened Ensure it is at room temperature
  • 0.5 cups powdered sugar Can use alternative sweeteners
  • 1 teaspoon vanilla extract
  • 1.5 cups heavy whipping cream Can substitute with whipped coconut cream
  • 2 cups mini rainbow marshmallows Can swap with other marshmallow flavors
  • 0.5 cups white chocolate chips Optional addition

Method
 

Preparation
  1. Line a square baking dish with parchment paper for easy removal.
  2. In a medium bowl, mix together the crushed graham crackers and melted butter until well combined. Press this firmly into the base of your prepared dish to form an even crust. Pop it in the refrigerator while you prepare the filling.
  3. In a large mixing bowl, beat the cream cheese with powdered sugar and vanilla extract until the mixture is smooth and creamy.
  4. In a separate chilled bowl, whip the heavy whipping cream until you achieve stiff peaks.
  5. Gently fold the whipped cream into the cream cheese mixture until it’s fully combined and silky smooth.
  6. Carefully fold in the mini rainbow marshmallows and optional white chocolate chips.
  7. Pour the creamy mixture over the chilled graham cracker crust and smooth it out evenly.
  8. Refrigerate for at least 4 hours or until the slice is firm and set.
  9. Once set, slice into squares, serve chilled, and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to one week; freeze individual slices for up to 3 months. Use a clean knife for perfect square cuts.
