No Bake Lemon Pie

Ingredients
  

For the crust

  • 1/2 cup salted butter Make sure it's completely melted.
  • 1 3/4 cup graham cracker crumbs
  • 1/4 cup granulated sugar

For the filling

  • 6.8 ounces instant lemon pudding mix
  • 2 cups whole milk You can use low-fat milk, but the pie might not be as creamy.
  • 1 teaspoon lemon zest Adjust according to taste.
  • 8 ounces Cool Whip Divided into two portions.

Preparation

  • In a medium bowl, melt the butter.
  • Mix the melted butter with graham cracker crumbs and granulated sugar to create the crust.
  • Press the mixture firmly into the bottom of a pie dish.

Filling

  • In another bowl, combine the instant lemon pudding mix with whole milk. Whisk until it thickens.
  • Fold in the lemon zest and half of the Cool Whip into the pudding mixture.
  • Pour the lemon pudding filling into the crust and spread it evenly.
  • Top with the remaining Cool Whip.
  • Refrigerate for at least 2 hours before serving to let it set.

Notes

To serve, slice into wedges and optionally add a lemon slice or sprig of mint on top. Store covered in the refrigerator for up to 4 days for best freshness.
