Ingredients
  

For the crust

  • 1/2 cup salted butter, melted
  • 1 3/4 cup graham cracker crumbs Finely crushed for better texture
  • 1/4 cup granulated sugar

For the filling

  • 6.8 ounces instant lemon pudding mix
  • 2 cups whole milk Can substitute with 2% or almond milk
  • 1 teaspoon lemon zest For enhanced flavor
  • 8 ounces Cool Whip Can substitute with homemade whipped cream

Preparation

  • In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press this mixture into a pie plate to form the crust.
  • In another bowl, whisk together the instant lemon pudding mix and whole milk until it thickens.
  • Stir in the lemon zest, then gently fold in the Cool Whip.
  • Pour the lemon filling into the prepared crust and spread it evenly.
  • Chill in the refrigerator for at least 2 hours before serving.

Notes

Store any leftovers in the refrigerator, covered with plastic wrap or aluminum foil. It can last for up to 3 days.
