Ingredients

For the crust
  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup unsalted butter, melted
  • 1/4 cup sugar
For the filling
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream whipped to stiff peaks
  • 1 teaspoon vanilla extract
  • Green food coloring to achieve desired shade
  • 12 oz white chocolate chips, melted
  • Red and white candy cane pieces or mini marshmallows for garnish optional topping

Method

Preparation
  1. In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar together until evenly coated.
  2. Firmly press the crumb mixture into the bottom and sides of a 9-inch pie dish. Refrigerate as you prepare the filling.
  3. Beat the softened cream cheese and powdered sugar in a large mixing bowl until you achieve a smooth consistency.
  4. Stir in the melted white chocolate chips and vanilla extract, blending until well combined.
  5. In a separate bowl, whip the heavy cream until stiff peaks form.
  6. Carefully fold the whipped cream into the cream cheese mixture until fully combined.
  7. Add a few drops of green food coloring until you reach your desired Grinch-green hue.
  8. Pour the green filling into the prepared graham cracker crust and smooth out the top with a spatula.
  9. Chill the pie in the refrigerator for at least 4 hours, or until set.
  10. Before serving, garnish the top with crushed candy cane pieces or mini marshmallows for that extra festive flair.

Notes

Store the No Bake Grinch Pie in the refrigerator, tightly covered. It can last up to 5 days, but freezing is possible, although it may alter texture upon thawing. Ensure cream cheese is at room temperature for better mixing, and be gentle when folding in whipped cream to maintain airiness.
